Ethnic Cuisine For Unexpected Taste Treats

photo Consumers look to ethnic cuisine for unexpected taste treats but their favorite foods are regional mainstays. Each of SYSCO's operating companies determines which products it will supply. Barbecued beef brisket is a standard in Texas, but in Tennessee or Kentucky pork is the choice. Pastrami and whole peeled potatoes are popular in the Northeast, while more breaded okra and catfish are sold in the South.

SYSCO "fold-out" operations are located near Hartford, Connecticut; Tampa and West Palm Beach, Florida; Charlotte, North Carolina; and Milwaukee, Wisconsin. "Fold-out" facilities in progress include distribution centers near San Diego, California and Birmingham, Alabama. Acquisitions include foodservice divisions of Jordan's Meats, Inc. near Portland, Maine, and Beaver Street Fisheries, Inc. in Jacksonville, Florida.
