Formulating Gluten-Free Tortillas for Great Taste and Texture

An increasing number of consumers are seeking gluten-free options that replicate the taste and texture of traditional products, including tortillas. Our proprietary research shows that 86% of tortilla buyers say they check the ingredient list or nutrition facts before making a purchase.

Maintaining the right taste, texture and appearance in a gluten-free tortilla without adding excessive sugar and fat can be challenging. Ingredion's solutions overcome these obstacles. Our HOMECRAFT® Prista pulse flours can help manufacturers replicate the body, elasticity and chewiness of traditional wheat tortillas while preserving surface color, flavor and cohesive texture. Since they are free of GMOs, pulse flours also provide a clean-label option.

Co-Creating a Meal Replacement and Nutritional Beverage

When a private-label company approached Ingredion for help in developing a clean-label meal-replacement beverage, Ingredion's food scientists began formulating. The goal was to rapidly develop a beverage that offered high protein, was rich in fiber, and matched the leading brand in taste, texture and mouthfeel.

Ingredion's experts leveraged our proprietary insights, global formulation expertise and extensive experience to develop a clean-label texture solution. We created a custom formulation featuring our NOVATION® functional native rice starch to enhance mouthfeel, improve color, flavor release, and increase process tolerance in production. By prioritizing local sourcing, all supplied ingredients remained readily available.

With a winning formulation in hand, we further collaborated with our private-label partner to test and scale the formulation solution on their production lines, paving the way for a seamless and successful launch.
